After a seemingly endless winter followed by a late, wet spring, this year’s honey bursts with the optimism many of us are struggling to feel. The colour is golden, reminding me of late summer afternoons when the bees are swooping in with their last load of nectar for the day. The palette remains fresh and floral, though, with a hint of something almost fig-like and a buttery, carmel finish.
